Cooking therapy

Moving to a new country is not easy and I knew the first six months would be hard.  So it is no surprise that I have kind of been in a depressive state lately...working late and little motivation to do anything else. But the hardest six months have past and I realize that I have seemed to turn a corner and I find myself doing more.  Particularly, I am starting to do some of my favorite things which are also kind of like therapy at the same time...
  • Gym:  I have finally got myself and Jared a membership and we have been attending weekend mornings and some evenings.  We are trying to get back into running some more races and taking spin classes.
  • Blogs and Pictures:  One of my favorite things to do and as you can tell I am finally up to date again.  It is something I can do when I am really really motivated. 
  • Cooking:  Yes I said cooking.  Who would have guessed 5 years ago that I would now like to cook? I love creating a new dish, I love great flavours, I love a relaxing night in my apartment and I LOVE good food.  It doesnt help that I havent been overly impressed with the dining options in Zurich...I am not much of a meat and potatos eater, I hate german food, too much Italian is not good for me, and there are not many other options. 
Pinterest has helped this new hobby of mine with all the great recipes.  Lately I have made my own versions of Chicken, leek and black bean tacos with cool zucchini salsa; Sweet potato, black bean and red pepper burittos; and Grilled peaches with vanilla bean.  I have been concentrating on fresh healthy meals. 
 
I also have been missing my healthy brunches from Australia.  This was always an eat out experience for me as you can not pass up a cafe overlooking the beach.  But breakfast in Switzerland is a little different. The Swiss wouldnt have breakfast without eggs and meat.  I dont eat eggs and I dont need meat at every meal.  So why not enjoy a delicious breakfast at home after the gym and relaxing in my apartment? This weekend I tried out one of my favorite brunches from Australia... Sweet Potato and Corn Fritters topped with avocado and bacon.
